21 and Counting

My cute sister turned 21 yesterday on 10-10-10. She graced us with her presence this weekend, so we actually got to spend her birthday with her! We went to the Tepenyaki Japanese Grill on Saturday, spent Sunday afternoon at the park playing football and walking the river trail with the dogs, and had a big family dinner on Sunday. For her birthday dessert, Kiersten wanted her absolute all time favorite no bake cherry cheesecake. It is the easiest recipe in the world, and super yummy, making it a signature dessert in our house growing up.

Cheesecake

1 graham cracker crust
1 can sweetened condensed milk
1 package cream cheese
¼ c lemon juice
1 t vanilla

Soften cream cheese. Blend well. Pour into crust. Refrigerate for 1 hour. Top with cherry pie filling, blueberry pie filling, etc.
