Shrimp Tacos

I absolutely love Bajio's shrimp tacos! I could eat them every day. However, I can't really afford to eat them every day, so I went on a quest to find a substitute recipe so I could make them at home. Not only were they delicious, but I made them healthier as well by eliminating the butter and adding some veggies into the taco mixture.

Shrimp Tacos

Ingredients
1 tsp. Olive oil
1 large purple onion, sliced into strips
2 bell peppers, sliced into strips
5 Tbs. chopped cilantro
1 1/2 lb. precooked cocktail shrimp, tails removed and cut in half
1 lime
4 tbsp. honey
salt and pepper to taste
8 soft taco sized tortillas (I always use La Banderita low carb, whole wheat tortillas. They are so good!)

Mango Salsa (We happened to have some of Costco's on hand)

1 Mango
1/2 Cup red onion, chopped
2 Tablespoons Cilantro
1 teaspoon sugar
1/2 Lime's juice
1/8 teaspoon chili powder

Directions
Warm oil in skillet over medium heat. Add onion, bell peppers, salt, pepper, the juice of half the lime, 2T chopped cilantro. Cook until onions are transparent, about 5 minutes. Add shrimp and cook only until warm.

In a small bowl, combine honey and chopped cilantro with other half of lime juie. Place the remaining mixture over the shrimp and cook 1-2 minutes more. Place shrimp mixture in tortilla, top with mango salsa, roll up and enjoy!

Makes 6-8 tacos, depending on how full you stuff them.

Caution: These tacos are extremely messy. You will have juice dripping down your arm.
